If you are looking for a lighter version of a pot roast, this is it. This meal is not only hearty and filling but is still light enough where it wont weigh you down. When ever I’m craving home-cooked meal like mom used to make, this is it!
INGREDIENTS
6 boneless skinless chicken thighs
1 medium onion, sliced
5 small red potatoes, sliced
2 stalks of celery, cut
3 carrots, peeled and cut
1 clove of garlic
2 tablespoons of olive oil
2 ½ cups of chicken broth
Salt and Pepper to taste
DIRECTIONS
1. Fully clean and rinse chicken and pat dry. Season with olive oil, salt and pepper. Place chicken in crock-pot.
2. Arrange onion, carrots, potatoes and celery around chicken and pour in chicken broth.
3. Cover crock-pot and cook on low for 6-8 hours. Serve.
Tip: If you are a sour cream fan, a little on the side goes a long way.
