Fingerling Potatoes and Asparagus Bake


Makes 6 servings

1 pound of fingerling potatoes
1 pound of fresh asparagus, trimmed
1 medium yellow bell pepper, sliced
1 medium red bell pepper, sliced
5 stalks of fresh thyme
1/3 cup of olive oil
2 tablespoons of minced garlic
2 slices of fresh lemon
½ teaspoon of cayenne pepper
Salt and Pepper to taste


  1. In a large bowl, combine potatoes, asparagus, yellow bell pepper, red pepper, and lemon.
  2. Coat vegetables with olive oil and toss with garlic, cayenne pepper, thyme, salt and pepper.
  3. Place in a roasting pan and bake in oven on 400 degrees for 40 minutes.
  4. Remove from oven once potatoes are tender. Let cool for 5 minutes and serve.
