Makes 6 servings
1 pound of fingerling potatoes
1 pound of fresh asparagus, trimmed
1 medium yellow bell pepper, sliced
1 medium red bell pepper, sliced
5 stalks of fresh thyme
1/3 cup of olive oil
2 tablespoons of minced garlic
2 slices of fresh lemon
½ teaspoon of cayenne pepper
Salt and Pepper to taste
- In a large bowl, combine potatoes, asparagus, yellow bell pepper, red pepper, and lemon.
- Coat vegetables with olive oil and toss with garlic, cayenne pepper, thyme, salt and pepper.
- Place in a roasting pan and bake in oven on 400 degrees for 40 minutes.
- Remove from oven once potatoes are tender. Let cool for 5 minutes and serve.
