As a child my brother and I would go to the pumpkin patch every year. We would pick out our pumpkins to carve for Halloween and attempt to bake the seeds. Now that I’m older, I realize that there was so much more I could have done with those pumpkins. This simple dessert highlights how delicious pumpkin can be.
PUMPKIN BARS
INGREDIENTS
- 4 Eggs, room temperature
- ½ cup vegetable oil
- 1 can of pumpkin
- 2 cups of all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 sticks of melted butter
DIRECTIONS
- In a large bowl mix pumpkin, vegetable oil vanilla and melted butter.
- While mixing on low, add baking powder, cinnamon, salt, and baking soda.
- Add flour and eggs by alternating between the two.
- Spray a non-stick 11X7 baking dish with cooking spray. Pour mixture into pan and bake at 350 degrees for 30 minutes.
- Take cake out of the oven and let cool on cooling racks before frosting. Serve.
INGREDIENTS
- 1 brick of cream cheese, soften
- ½ cup butter, soften
- 2 cups powdered sugar
- 1 teaspoon vanilla
DIRECTIONS
- In a large mixing bowl, cream butter and cream cheese. Add vanilla.
- Gradually add powdered sugar. Whip until smooth.
Tip: If your frosting is too thick, add a little milk.
