Pumpkin Bars with Cream Cheese Frosting


As a child my brother and I would go to the pumpkin patch every year. We would pick out our pumpkins to carve for Halloween and attempt to bake the seeds. Now that I’m older, I realize that there was so much more I could have done with those pumpkins. This simple dessert highlights how delicious pumpkin can be.



  • 4 Eggs, room temperature
  • ½ cup vegetable oil
  • 1 can of pumpkin
  • 2 cups of all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 sticks of melted butter


  1. In a large bowl mix pumpkin, vegetable oil vanilla and melted butter.
  2. While mixing on low, add baking powder, cinnamon, salt, and baking soda.
  3. Add flour and eggs by alternating between the two.
  4. Spray a non-stick 11X7 baking dish with cooking spray. Pour mixture into pan and bake at 350 degrees for 30 minutes.
  5. Take cake out of the oven and let cool on cooling racks before frosting. Serve.


  • 1 brick of cream cheese, soften
  • ½ cup butter, soften
  • 2 cups powdered sugar
  • 1 teaspoon vanilla


  1. In a large mixing bowl, cream butter and cream cheese. Add vanilla.
  2. Gradually add powdered sugar. Whip until smooth.
Tip: If your frosting is too thick, add a little milk.
