Warm Spinach Salad


Makes 4 servings

1 bunch of fresh spinach
1 small yellow bell pepper sliced
1 pear, peeled and diced
¼ cup of olive oil
½ cup of cherry tomatoes
½ tablespoon of fresh grated ginger
1 tablespoon of garlic
2 tablespoons of apple cider vinegar
Salt and Pepper to taste


  1. In a large bowl mix spinach, pear, and cherry tomatoes
  2. In a medium frying pan, pour in oil, ginger, and garlic on medium heat. Once ginger and garlic mixture is tender add apple cider vinegar.
  3. Add green mixture to frying pan constantly tossing so that the spinach does not wither. Add salt and pepper and continue tossing.
  4. Remove from heat and serve immediately.
