Makes 4 servings
1 bunch of fresh spinach
1 small yellow bell pepper sliced
1 pear, peeled and diced
¼ cup of olive oil
½ cup of cherry tomatoes
½ tablespoon of fresh grated ginger
1 tablespoon of garlic
2 tablespoons of apple cider vinegar
Salt and Pepper to taste
- In a large bowl mix spinach, pear, and cherry tomatoes
- In a medium frying pan, pour in oil, ginger, and garlic on medium heat. Once ginger and garlic mixture is tender add apple cider vinegar.
- Add green mixture to frying pan constantly tossing so that the spinach does not wither. Add salt and pepper and continue tossing.
- Remove from heat and serve immediately.
