One of my husband’s favorite dishes is Creamy Fettuccine Alfredo. He has been ordering this dish since he was a child. Interestingly enough my favorite pasta sauce is Marinara; therefore you can see the problem we have when it’s pasta night at our house. After playing around a bit with different types of creamy sauces that we would both enjoy, I created three Alfredo sauces that are not only creamy but also delicious! Whether you want a heavy creamy sauce, something on the light side, or even a Vegan option; you will find one of these sauces perfect.
Easy Creamy Alfredo Sauce
INGREDIENTS
- ½ cup of butter (1 stick)
- 8 ounces of cream cheese, softened
- 1 cup of milk
- 1 cup of half-and-half
- 2 tablespoons of garlic powder (or minced garlic)
- ½ cup of shredded Mozzarella
- ¼ cup of grated Parmesan Cheese
- Salt and Pepper to taste
DIRECTIONS
- In a saucepan, melt butter over low heat. Dice into smaller pieces to melt easier.
- Slowly add in flour to mixture while whisking until smooth.
- Pour in milk, whisking mixture until completely melted.
- Add in cheese and continue to Wisk.
- Add garlic, salt, and pepper to taste.
- Once the cheese is completely melted and sauce has simmered for about 7 minutes, it is ready to serve.
Tip: Don’t have time to stand over a stove? You can save a ton of time by making your sauce in a crockpot. Put all of the listed ingredients in a crockpot and let it cook on low. A few hours later you will have a beautiful sauce for dinner.
“Skinny” Alfredo Sauce
INGREDIENTS
- ½ cup of butter or margarine
- 3 tablespoons of flour
- 2 cups of low-fat milk
- ¾ cup of low-fat Italian Cheese Blend or grated Parmesan Cheese
- 1 tablespoon of garlic powder Salt and pepper to taste

- Pour in milk, whisking mixture until completely melted
- Add in cheese and continue to Wisk.

Cauliflower “Alfredo” Sauce (Vegan)
INGREDIENTS
- 1 medium cauliflower
- 2 tablespoon of Earth Balance or olive oil
- 2 tablespoons of minced garlic
- ½ cup of unsweeted almond milk
- ¼ cup of nutritional yeast flakes
- 1 teaspoon of onion powder
- 1 tablespoon of lemon juice Salt and pepper to taste
DIRECTIONS
- Cut cauliflower into pieces and place in a steamer for 10-12 minutes. (You can also boil cauliflower until tender and drain)
- While cauliflower is steaming, in a medium pot add garlic and Earth Balance and sauté over low heat for about 4 minutes
- In a blender add the cooked cauliflower, sautéed garlic, milk, nutritional yeast flakes, lemon juice, onion powder, salt and pepper and blend until smooth.
- Pour mixture back into medium sauce pot and simmer on low.
- Once your pasta or veggies of choice are done cooking, pour mixture over them and serve.
Tried this tonight for the first time. It’s delicious! I used a bit more nutritional yeast to give it a slightly cheesier flavor. And I only had slightly sweetened almond milk, so I upped the lemon juice to counteract. Served with linguini, steamed broccoli, and a side of garlic bread. Loved it, and so did my carnivore hubby!
